PASTURE WALK: HANDS-ON BEEF QUALITY & YIELD GRADING. Jill Mattos from Big Island Beef slaughterhouse in Paauilo will show us how to quality and yield grade six grass-fed cattle from Triple D Ranch. You’ll get hands-on experience with carcass grading. Jill will share with us what local markets are looking for in quality grass-fed beef. We’ll also cover important humane handling methods.
